Ingredients

Yummy chicken and veg satay

  • 2 garlic cloves
  • 30 g oil
  • 120 g crunchy peanut butter
  • 300 g coconut milk
  • 2 tablespoons TM vegetable stock concentrate
  • 2 teaspoons curry powder
  • 800 g Chicken thigh fillets, diced
  • 1 zuchinni, diced in lge chunks
  • 1 red capsicum, diced in lge chunks
  • 1 handful green beans
  • 1 onion, quartered

Recipe's preparation

    Prep
  1. 1. Add onion and garlic to the bowl and chop for 4 sec, speed 7.

    2. Add oil and saute for 3 min, Varoma speed 1.

    3. Add all other ingredients (except veg) with the chicken last. Cook for 15 min @ 100 Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" leaving mc off for a thicker sauce.

    4. Add veg and cook for further 8 min @ 100 Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    5. Once cooked pour into Thermoserver to keep warm and use TM bowl to cook rice. You can rinse the bowl first but I don't usually bother.

    Serve with hot rice and garnish with finely sliced spring onion.

    This recipe is absolutely delicious. I made it with coconut cream and added 1 tbsp of soy sauce, but otherwise as per the recipe. I cooked coconut rice after while the chicken was settling in the thermoserver and the whole meal was outstanding - everyone in my household devoured it. Thanks for this great Recipe- will now be a regular.

    Exactly as it said it is. I used peanut butter which was raw - 100% peanuts. Actually think it would have been better with the supermarket peanut butter. Loved the cooking of chicken in the jug - got me out of my comfort zone.

    This was really easy and delicious! I reckon we could use a variety of vegies in this and just tweak their size, cooking time, which would make it a bit different every time. Thanks.

    easy and quick. I think maybe a bit of chilli, a dash of maolasses, and possibly a bit of soy next time, to enhance and deepen the flavour

    This recipe was delicious.  Made a good amount too. Would easily feed 4 adults with rice. I used 400ml coconut milk & more veges. Everyone enjoyed it.

    I made this recipe last night for the first time. Very popular. Even my 11 year old ate it, and he doesn't like spicy food. Will def make again. Cheap, healthy and easy.
