- 800 grams of chicken thighs, sliced into large peices
- 18 dried apricots
- 30 grams of olive oil
- 1 large onion, peeled and quatered
- 3 cloves of garlic
- 2 cm piece of ginger, roughly chopped
- 3 large green chillis, seeded and roughly chopped
- 1 level teaspoon of cumin seeds
- 1/2 or 1 teaspoon of chilli powder depending on how you like your heat, I used one teaspoon
- 1 level teaspoon of ground tumeric
- 4 cardamon pods - bruised
- 4 Large Tomatoes, peeled and cut into eighths
- 1 heaped tablespoon of cornflour, if you like a thicker sauce

Soak the dried apricots in one cup of water for around and hour
Slice a cross on the bottom of the tomatoes and cover in a bowl with boiling water and peel when cool - the skins will slip off
Add onion and garlic, ginger and chillis to bowl - chop 6 seconds, speed 5, scrape down bowl with spatula and repeat
Add oil and cook 2 minutes, 100 degrees, speed 1
Add spices and cook 2 minutes, 100 degrees, speed 1
Add tomatoes and apricots and the water cook 15 minutes, 100 degrees, reverse, spoon MC off Basket on top
Add chicken and cook 12 minutes, 100 degrees, reverse, spoon, stir with spatula through the hole half way through MC off basket on top
If you wish to thicken the sauce a little, mix one heaped teaspoon of corn flour with a little water to make a runny paste - add to the bowl and stir with spatula - then cook 2 minutes, 100 degrees, reverse, spoon
Serve with boiled rice with added grated carrot and slivered almonds and if you wish some raisins ---- Enjoy

Short cut --- while the onions and spices are cooking peel and slice the tomatoes as you have the time
When the base curry is cooking slice the chicken
