Ingredients
Kaffir Curried Chicken
- 2 cloves garlic, Peeled
- 2 onions, Peeled & Halved
- 20 grams coconut oil
- 2 tablespoons curry powder, Thermomix curry or shop purchased
- 2 tablespoons turmeric
- 400 gram coconut cream, Homemade or Tinned
- 3 leaves Kaffir Lime, Remove stems
- 2 --- Curry Leaves
- 30 gram coriander, Stems, Leaves & Roots (if available)
- 2 or 3 Birdseye chillis (with seeds), Remove seeds to reduce heat
- 700 gram chicken thighs, Chopped into bite size pieces
- 2 tablespoons palm sugar, Or Brown Sugar
- 1/2 Kaffir Lime or Lime, Cut into wedges
- 2 tablespoons fish sauce
- 3 tablespoons Arrowroot
- salt to taste
- snow peas, Washed and De-stemmed
Garnish
- 2 tablespoons Lime or Kaffir Lime Zest
- 4 tablespoons Coconut or Plain Yoghurt
- coriander leaves

Place garlic, coriander stems (and roots if available) chili and onion in bowl and chop for 3 sec/speed 7
Scrape down sides of bowl with spatula
Add coconut oil, curry powder and turmeric and saute 3 min/Varoma/speed 1
Add coconut cream, fish sauce, kaffir leaves, curry leaves, chicken, sugar, and lime wedges and cook for 15 min/Varoma/Reverse/Speed 1. Leave MC off for this step
Add arrowroot (mixed in a little water to a creamy paste consistency) and coriander leaves and cook for a further 4 min/100c/Reverse/speed 1 (MC off)
Check chicken, which should be just cooked through. Add several minutes of cooking if required
Season with salt to taste
Transfer to ThermoServer and add snow peas, removing kaffir leaves and kaffir lime or lime wedges.
Prepare rice or cauliflower rice
Garnish curry with coconut or plain yoghurt, lime zest and coriander leaves and serve over rice of choice

Tip
This dish can have more "bite"by adding more fresh chillies.
Remember to remove lime wedges and kaffir leaves

Delicious curry! Will definitely be making it again. We used 1kg of chicken and carnation evaporated milk in coconut flavour to lighten it up a bit. Next time will add veg like the comment above Thanks for sharing
We loved this dish! I tried it for the second time today and dissolved the arrowroot first this time! I used less of the hot spices to suit my taste. My hubby who loves his curries said 'this one is up there' with our other favourite curry recipes. Thanks Christine!

This was a nice dish however I expected more flavour. I will try making my own curry paste next time
Enjoyed it thank you. Added sweet potato, broccoli and beans, as a one pot dinner - no rice. Will do again, maybe substitute lime juice instead of the wedges, as my husband isn't keen on 'zest'.
