Ingredients
- 40 grams Unsalted bbutter
- 1/2 brown onion
- 1 level teaspoon salt
- 500 grams asparagus
- 6 eggs, Large
- 250 grams marscapone cheese, Recipe TM Everyday CookBk pg 19
- 200 grams shredded cheese, Swiss, mild cheddar or your favourite.

Pre heat oven to 160 degrees Celcius and to prepare to dish spray with cooking spray or lightly grease with preferred substance.
Peel onion, chop in half and place into TM Bowl.
Chop for 3 secs on speed 6.Add Unsalted Butter and cook for 2 mins at 100 degrees on speed 1 with the MC off.
Cut up Asapargus to 2.5cm size pieces, disgarding the woody ends. (use in the stock paste yumm).
Add to the onions and stir "Gentle stir setting" on reverse "Counter-clockwise operation" for 100 degrees 3 mins until tender.With MC on.Empty into prepared dish. shift ingredients to evenly cover the base of the dish.
Cool TM bowl or use second bowl.
Add the eggs and the Marscapone Cheese, whisk 5-6 secs on speed 7-8 until incorporated but not frothy.Gently pour over the onion and asparagus in you dish.
Top with shredded cheese.Place on centre rack in preheated oven and turn heat to 200 degrees celcius for 10 mins, then turn down to 160 for approx 20 mins. Slice is cooked when eggs start to brown or slightly soft in centre.
Remove from oven and serve with Carrot Salad from the Vegitarian Cook Book.
Asparagus Slice
Tip
You can use any veg inseason as long as they are not watery. For example cold cubed potatoes, pumpkin, sweet potatoes, broccoli, carrots, peas and beans, corn, top with sliced tomatoes.
Great cold for lunch boxes!

Made this with aspargus, broccoli and corn and substituted the marscapone with cream cheese - absolutely delicious!
I made this with Zucchini...it was good. Also i used Mozorella cheese instead of Marscapone...still delicious. I would do the last step first....i.e.grate cheese and mix with egg, then set aside. Do the onions and asparagus/zucchini ....etc. Then you done need to wait for the bowl to cool down
