Ingredients

Deb's Vegie burger

  • 2 slices bread, stale, Gluten free if needed
  • 50 grams red onion, Chopped into chunks
  • 350 grams zucchini, Chopped into chunks
  • 100 grams carrot, Chopped into chunks
  • 1 can corn kernels, Drained
  • 1 can chick peas, Drained
  • 1 egg
  • 100 grams Self Raising Flour, Gluten free if needed
  • 1 heaped tsp salt
  • to taste pepper, ground
  • olive oil
  • burger buns
  • Iceberg Lettuce
  • Slices of tomato
  • Slices of cheese

Recipe's preparation

    Method
  1. 1: Add the bread to the mixer bowl for 4 seconds on speed 6, set aside.
    2: Add the onion and the zucchini to the bowl for 5 seconds on speed 6, or until there are no large chunks. Pop into a nut bag or clean tea towel and squeeze the moisture out. Set aside in a large bowl.
    3: Add the carrot to the mixer bowl for 3 seconds on speed 6. Add to the zucchini and onion. At this point add a large teaspoon of salt and let the mix sit for 10 minutes. Squeeze out any additional moisture.
    4: Add the corn, flour and egg to the large bowl with other ingredients.
    5: Add the chick peas to the bowl for 4 seconds speed 6. I like it almost paste like, do less time if you want chunks of chick peas. Add this to the rest of the mixture and add a good pinch of black or white pepper.
    6: Set a non stick pan to a medium heat and add some olive oil. In batches, cook the burgers for around 10 minutes to ensure they are cooked through.
    7: Serve on a bun with lettuce, tomato, cheese and anything else that suits your fancy. We've tried mayo and sweet chilli, both delicious. If you are low carb, you could also serve in a lettuce cup 🙏
