Ingredients

Dressing

  • 3 centimetre ginger, fresh, finely grated
  • 1 clove fresh garlic peeled, Finely grated
  • 2 level tablespoons soy sauce
  • 3 level tablespoons sesame oil
  • 3 level tablespoons rice wine vinegar, Or sherry

Main Dish

  • 250 grams dried noodles, Of your choice (rice, buckwheat, Singapore etc)
  • 500 grams broccoli, Cut into small florets
  • 2 carrots, Julienned
  • 1/4 cabbage, sliced
  • 4 eggs, Fried

Recipe's preparation

    A simple meal, great for busy nights
  1. Place 1000gms water in jug.

    place noodles in steamer basket (if using rice noodles, place in basket with 6 minutes left - be guided by packet instructions),,

    Place prepared vegetables in varoma and steam for 20min.

    meanwhile, grate ginger and garlic, and mix in a large bowl with soy, sesame oil and rice wine.

    Fry eggs to your liking, about three minutes before steaming is done - a runny yolk is delicious mixed through the noodles.

    As the eggs fry, mix the noodles and steamed vegetables through the dressing. Divide amongst plates, and top with fried eggs.

    A nice touch is to serve with wedges of lemon/lime, chilli sauce or chopped chilli, and toasted sesame seeds.

Tip

We have eaten this with left over roast chicken, but have also stirred through some steamed prawns added to the varoma in the last five minutes of cooking.

you can also leave off the eggs and add shredded tofu if you are looking for an egg free/vegan option.

We also make this dish gluten free with use if tamari instead of soy.

    This was lovely! Even better topped with some toasted slivered almonds for a bit of crunch.
