Ingredients

Bolognese

  • 1 carrot, roughly chopped
  • 1 Capsicum, roughly chopped
  • 2 stalks Celery, roughly chopped
  • 1 zucchini, roughly chopped
  • 10 g olive oil
  • 1 tsp ginger, (I use ginger from a jar)
  • 175 g Red Split Lentils, rinsed and drained
  • 1 can chopped tomatoes (400g)
  • 2 tablespoon tomato paste
  • 2 stock cubes, (or equivalent stock paste)
  • 450g water
  • salt & pepper, to taste

Pasta

  • 400g spaghetti or other long pasta

Recipe's preparation

  1. Place carrot, capsicum and celery in TMX bowl and chop 5 seconds / speed 7. Add zucchini and chop 5 seconds / speed 7. Add oil and ginger and cook for 4 mins / 100c / speed 1 or until vegetables are soft.

  2. Add lentils, tinned tomatoes, tomato paste, stock cubes and water into the TMX bowl. Cook for 20 mins / 100c / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

     

  3. While lentils are cooking in TMX, cook pasta in boiling water according to packet directions.

  4. Drain pasta. Season bolognese with salt and pepper to taste and stir bolognese into pasta before serving.

    Delicious meal, even the kids loved it! I used tinned brown lentils, and added onion, garlic, Italian herbs and extra tomato paste. I think I’d use less water next time.

    Thanks for sharing, really greact option for my flavour loving crew with a chilli and some Tuscan seasoning added. Used the tinned lentil like in the earlier comments.

    Oh wow! This is really good, so much flavour!. I used french brown lentils which meant it took about 40 mins to cook but the result was well worth it! I'm not a full blown vegetarian but recipes like this make it easy to avoid meat. Thanks tmrc_emoticons.)

    I love this recipe, it's really delicious and full of good stuff. I only add a bit of water and it works out really well.

    My husband made this and we both really enjoyed this dish (he eats meat & I don't).  We added 1 onion with the vegetables, used 2 tblsp Thermomix stock paste and topped the meal with parmesan cheese.  Really delicious and made plenty for two more meals for us.  We used red split lentils which worked well.  Thank you

    Yum! Used canned lentils instead and omitted the water and just put them in for last 10 mins.
