- 2 large eggs
- 1/4 onion or a spring onion
- 1/4 red capsicum
- 3 sprigs basil/parsley or coriander
- 1 litre hot tap water
- salt and pepper to taste

Crack the eggs into the bowl and mix 5 seconds speed 5.
Take a piece of baking paper that fits into the Varoma tray and wet throughly (scrunch it up while doing so). Place on Varom tray so it slightly goes up the sides but doesnt bloc the side steam holes.
Pour the egg onto the baking paper.
Without cleaning the bowl, and the remaining ingredients. Chop 3 seconds speed 7.
Using the spatula tip the vegetables and herbes onto the egg and spread out.
Fill the "Closed lid" with one litre of hot tap water (I rinse the bowl quickly with the cold water as its heating from the tap)
Place the "Closed lid" back into the Thermomix, Put Varoma dish in place and gently play in Varoma tray with Lid. Set Thermomix for 11 minute, Varoma temp, speed 4.
When the Thermomix has finished, lift one side of the bakers paper and the omlette will gently roll up. Roll onto a plate and enjoy, seasoning with salt and pepper to suit your tastes.
Tip
Change up the veggies and herbs to suit your taste. Add some ham/cooked chicken for a protein boost.
This recipe frees you up in the morning to do the other stuff - get the kids ready/have a shower, whatever!
