50gms oil 1 tsp Cumin seeds ½ tsp Mustard seeds 1 heaped tbsp Ginger paste 1 tsp Crushed Green Chilli 300gms baby Potatoes (peeled & cut in quarters) 250gms Eggplant cut in 1.5cm pieces 1 tsp Cumin Powder 1-1/2 tsp Coriander Powder ¼ tsp Turmeric Powder 1

- 1) Add oil to TM bowl and Heat 3 min/Varoma/Reverse/speed 1
2) Add cumin seed, mustard seeds to TM bowl and heat 2 min/Varoma/"Counter-clockwise operation" /Speed 1
3) Add Ginger paste, crushed green chilli to TM bowl and cook 3 min/Varoma/"Counter-clockwise operation" /Speed1
4) Add Potato, Eggplant to TM bowl along with cumin powder, coriander powder, turmeric powder, red chilli powder, salt.
5) Mix gently with spatula to coat vegetables evenly
6) Cook 3 min/Varoma/"Counter-clockwise operation" /Speed 1
7) Add Chopped Tomato, raw sugar and cook 3 min/Varoma/"Counter-clockwise operation" /Speed 1
Add Water and cook 20 min/Varoma/"Counter-clockwise operation" /Speed 1
9) Check potatoes are done. Prolong cooking if necessary
10) Garnish with coriander leaves
Tip
Add 1 tsp Crushed Garlic at Step 3 if you wish
