Ingredients

  • 2 cloves garlic
  • 1 zucchini, cut into approx 3cm lengths
  • 120 g Gruyere cheese
  • 30 g Dijon mustard
  • 1 egg
  • 5 Large Tomatoes
  • EVOO drizzle
  • sea salt
  • mixed herbs to sprinkle

Shortcrust Pastry

  • 1 portion BCB shortcrust pastry

Recipe's preparation

    Filling Method
  1. Preheat oven to 180 degrees.  Spray tart tin or baking dish (approx 30cm x 20cm) with rice bran oil.  Line the dish with pastry, folding the edges over slightly to form a rim.

  2. Cut cheese into 3 cm cubes.  Place cheese in bowl.  Turbo 2 secs (or  longer for desired consistancy)  Sprinkle over pastry.

  3. Place garlic & zucchini in bowl.  Turbo 2 secs and spread over base.

  4. Add mustard & egg to bowl.  Mix 10 secs speed 1.  Pour mixture onto base and spread evenly

  5. Slice tomatoes and cover top of mixture.

  6. Sprinkle with EVOO and sea salt & mixed herbs to taste

  7. Bake in the middle of the oven until golden brown, approx 30 - 40 minutes.  Check after 25 mins.  Cool in tin or dish, or serve hot.

    Delicious!
    Made this for dinner along with onion soup. I added 2 eggs and double amount of dijon mustard, as I felt just 1 egg was not enough.
    I will for sure make this recipe again. Thanks for sharing 😊

    So glad you liked it.  It's an eay 'go to' recipe at our house in Summer.  Will try your additions when I next make it.

    This was delicious, I added about 6 sprigs of parsley to the bowl and chopped it with the onion and Zuchinni. I sprinkled lemon/herb pepper seasoning to the top of the slice before placing it into the oven. May I suggest that you blind bake the shortcrust pastry and make a double batch of it. I also used 2 eggs. This ate well for lunch with a chicory salad on the side. Will certainly make this one again.
