Ingredients
Chicken, Mushroom and Cherry Tomato Risotto
- 80 gram parmisan cheese
- Half onion, Cut in quarters
- 40 gram Butter
- 40 gram olive oil
- 280 gram rice, Risotto rice is preferred
- 400 gram chicken, Cut into cubes
- 270 gram Mushroom, Can be a medley but field mushroom works best
- 150 gram cherry tomatoes
- 80 gram spinach, I use from frozen spinach cubes. If using fresh, throw them in for 5min at the end
- 3 cloves garlic, Crushed
- 2.5 tablespoons Vegetable stock paste, Or use 2 stock cubes.... See veg stock past recipe to create your own
- 65 gram dry white wine
- 670 gram water
- Chilli to taste, Optional, Paste, fresh or dry
- Parsley or spring onion, Optional for garnish
- paprika, Optional for garnish

- Grate Parmisan
10sec/speed 10
Put aside. - Place onion in mixing bowl
3sec/speed 5 - INSTERT BUTTERFLY WISK
Add 280g rice and sauté
3min/varoma/speed 1 - Scrape"Closed lid" down and stir
Add 65g dry wine and sauté
2min/varoma/speed 1.5 - Stir rice then
Add 400g chicken (cut into cubes) , 270g sliced mushroom, 670g water, 2.5 tbs veg stock paste
3min/100°C/speed1.5 ....Use simmering basket on top.... - Add 150g Cherry tomatoes, 80g spinach Garlic, Chilli
10min/100°C/speed1 - Stir, if too watery put on again
3min/100°C/speed1.5 - Add most of the Parmisan cheese, stir and cover for a few minutes to thicken
- Garnish with left over cheese, fresh herb and Paprika. Add salt if needed

Allow it to be a little watery as it'll thicken when it sits.
