Ingredients

Risotto

  • 70-80 grams Parmesan cheese, cut into cubes
  • 4-6 sprigs shallots/spring onions, (white and green part) chopped
  • 30 grams olive oil
  • 350 grams arborio rice
  • 100 grams white wine
  • 2 tablespoons Thermomix Vegetable Stock Paste, to taste
  • 300-350 grams chicken, roughly cut into cubes
  • 1 litre water, (fill TM bowl just under 2L capacity line)
  • 100 grams carrot, roughly chopped
  • 300-400 grams pumpkin, skin removed, roughly chopped
  • sea salt and black pepper, to taste
  • lemon juice, to taste
  • 60 grams rocket
  • 50 grams sundried tomato, (optional), roughly chopped

Recipe's preparation

  1. Place cubed Parmesan cheese into TM bowl and grate 10 seconds/speed 9. Set aside. Clean and dry TM bowl.

  2. Place shallots/spring onions and olive oil into TM bowl. Saute 2 minutes/Varoma/Speed 1.

  3. Insert Butterfly. Add rice, wine and thyme and saute 2 minutes/100 degrees/counter-clockwise operation/speed 1.

  4. Add stock, chicken and water and cook 8 minutes/100 degrees/counter-clockwise operation/speed 1.

  5. Add carrot and pumpkin and continue cooking for a further 10 minutes/100 degrees/counter-clockwise operation/speed 1. Remove Butterfly

  6. Pour into Thermoserver, season with sea salt, black pepper and lemon juice to taste and stir through parmesan cheese. Add sundried tomato (if using) and stir well

  7. Let sit for 10 minutes in thermoserver then add rocket and stir through just prior to serving (leaving a small amount to garnish).

Tip

The rice will be a soupy consistency when poured into the ThermoServer and will continue to absorbe any liquid the longer it rests.

Serve risotto garnished with a small handful of rocket and shaved parmesan

    Made this for tea tonight and hubby said it was the nicest risotto he'd ever had. Only changes were using leftover roast chicken which we added to Thermo server at end. Used baby spinach instead of rocket too. Didn't use wine as we didn't have any. Thanks for sharing, a great recipe!

    This is now on weekly rotation in our house. Thank you for sharing. Fantastic for long, cold days at work. When you come home late and get tempted to buy junk food home deliveries. Now I just make your risotto and then we can have the left overs for lunch - it is perfect!

    This recipe is easy to follow and the dish is restaurant quality! I loved the texture and flavour of the rocket lettuce. My kids loved it too! I added pinenuts.
