basil pesto
- 1 bunch basil
- 30 grams Grated Parmesan
- 1 clove garlic
- 120 grams olive oil
- 35 grams pine nuts
risotto
- 350 grams Kent pumpkin, 2 cm pieces
- 2 tablespoon olive oil
- 1 brown onion
- 2 bacon rashers
- 200 grams chicken breast
- 125 grams Philadelphia Cheese
- 250 grams Aborio Rice
- 125 grams white wine
- 2 tablespoon TM veg stock
- 1 litre water

I'm cooking this todayRecipe's preparation
1. place garlic into mixing bowl chop 3 sec/speed 7.
2. add Basil, pinenuts and parmesan chop 10 sec/speed 6.
with bades rotating speed 4, slowing add oil through hole in lid. set aside
cook pumpkin in oven at 180-200 degrees for approx 20 mins
1. place onion in TM bowl chop 3 sec / speed 7. scrape down sides of bowl.
2. add oil and bacon (hand chopped/diced) and saute 4 mins / veroma / "Counter-clockwise operation" speed 1
3. insert butterfly add rice and wine, saute 2 mins / 100 degrees/ "Counter-clockwise operation" / speed 1
4. add stock, diced chicken breast and water cook for 17 mins / 100 degrees / "Counter-clockwise operation" / speed 1.
5. add philly cheese "Counter-clockwise operation" / speed 1 until just combined, pour into thermoserver with roasted pumpkin and half the pesto stir to combine. allow to rest for 5 mins before serving.
6. serve topped with remaining pesto

if you dont have philly cheese, cream work well too.

Was nice a little watery what others have said but still very nice thank you
Delicious thank you, however I had to add 400g of rice as it was very watery with only 250
My family and I loved this recipe. I only added 800ml of water and extra chicken as the comment below suggests and it was perfect. Will definitely be making this again!
Really delicious!
Tried this for the second time & mastered it. Used more chicken, which only allowed me to add about 800ml of water before I got to the max line. I then cooked it for 5 minutes longer than usual & it was absolutely AMAZING CREAMY DELUXE!! This dish is divine!!!
Was quite wet, but still awesome & very fresh tasting with the basil
