Curry Chicken Pasta
- 2 cloves garlic
- 1 onion, Quartered
- 20 g olive oil
- 80 g celery stalk, chopped pieces
- 80 g Capsicum, chopped pieces
- 80 g zucchini, chopped pieces
- 1 1/2 tsp curry powder
- 1 tsp dill, dried
- 600 g water
- 1 tbsp chicken stock paste, heaped
- 1/2 - 1 tsp salt, to taste
- 170 g pasta, dry, orzo or small pasta i.e. Macaroni
- 200 g cream
- 1 tbsp lemon juice, Optional
- 1/2 tsp ground pepper, Black, extra for sprinkling
- 100 g peas, baby, frozen

- Place 2 garlic clove 1 Onion Quartered 20 g Olive Oli, chop 5 sec/speed 5 then sauté 3 min/120°C/speed 1.
Add 1 1/2 tsp Curry Powder and 1 tsp Dried Dill to mixing bowl then chop 5 sec/speed 2
Add 600 g water, 1 heaped tbs chicken stock concentrate and ½ - 1 tsp fine sea salt, to taste then mix 5 sec/speed 5
Placing simmering basket instead of measuring cup onto mixing bowl lid. and cook 11 min/Varoma/speed 1.
Add 170 g orzo or small pasta i.e. Macaroni, Placing simmering basket instead of measuring cup onto mixing bowl lid again and cook for time indicated on packet or 9 min/100°C/"Counter-clockwise operation" /speed 1. Meanwhile , whisk cream and cornflour together in a bowl.
Add Cream Mixture, 1 Tbsp lemon juice optional, ½ tsp ground black pepper, plus extra for sprinkling and 100 g frozen peas and corn optional to mixing bowl then heat 2 min/100°C/"Counter-clockwise operation" /speed 1
Transfer to thermal server and then leave rest for 5 minutes. Serve Hot.
Tip
Soft meal good for after tooth extractions or surgery. You can change the vegetables up to your liking and add shredded chicken at step 6 if required. Keeps well for up to 4 days in the fridge. This is my take on a homemade version of the Campbells curry chicken noodles pasta
