Ingredients

Gluten Free Chicken Pasta Bolognese

  • 100 grams Parmesan cheese, Cut into 2cm pieces
  • 600 grams chicken thighs, partly frozen, Divide 300g portion approx. Cut into 3cm pieces
  • 1 onion, or 4 shallots, cut in half
  • 2 clove garlic
  • 1 Zuchini
  • 2 carrots, roughly chopped
  • 3 stalks Celery
  • 2 sprigs fresh oregano
  • 2 sprigs fresh basil
  • 2 sprigs chives
  • 20 grams olive oil
  • 1 bottle Passata (700gms)
  • 50 grams tomato paste
  • 50 grams red wine
  • 30 grams water
  • 1 tablespoon Stock Concentrate
  • 1 to taste Salt & pepper to taste
  • 1 package Gluten Free dry pasta

Recipe's preparation

    Method
  1. 1.  Cut chicken thighs into approximately 3cm pieces. Divide into 2 x 300 portions. Place 1 x 300g portion of diced chicken into TM bowl and mince 8 sec/speed 6. Transfer mince to bowl and set aside.  Repeat with second 300g portion of chicken and set aside in the same bowl.  Wash and dry TM bowl. 

    2. Add 2cm pieces parmesan cheese to TM grating 10-15 seconds/speed 10, MC on

    3.  Place onion/shallots, garlic, zucchini, carrots, celery, oregano, basil, chives into TM bowl. Chop 8 seconds/speed 9/MC On. Scrape down side of bowl.

    4. Add 20g olive oil to TM bowl and cook for 5 min/100 degrees/speed 2/MC On.

    5. Add remaining ingredients (passata, red wine, tomato paste, water, stock concentrate, salt and pepper), except the chicken mince and dry pasta. 

    6. Insert simmering basket into the TM bowl and add chicken mince inside. Cook for 15 minutes/Veroma/speed 4/MC on.

    7. Break up the mince with the spatula, cook for a further 15 minutes/Veroma/speed 4/MC on, or until mince is cooked through. 

    8. Cook 1 pack of Gluten Free dry pasta (or whatever dry pasta you prefer) as per packet instructions on the stove. 

    9. Place cooked gluten free pasta into a serving bowl, add cooked mince and pour source over the pasta. Stir through. 

    10. Sprinkle grated parmesan on top to your liking. 

Tip

Easily substitute with vegetables readily available. 

Any pasta could also be used.

    Adding a little grated parmesan even some parsley helps lift the dish and look more attractive on the plate.
