Ingredients

Pesto

  • 140 grams rocket
  • 15 grams basil
  • 90 grams pinenuts
  • 60 grams Parmesan cheese
  • 30 grams lemon juce, from 1/2 lemon
  • 35 grams Garlic olive oil
  • 10 grams olive oil
  • .25 teaspoon salt
  • pepper, to taste

Pasta

  • 320-400 g Penne, dried
  • 1200 g water
  • 1.5 teaspoon salt, optional

To Serve

  • 2 tomatoes, roughly chopped
  • 1 avocado, diced
  • Parmesan cheese, grated

Recipe's preparation

    Pesto
  1. Put all ingredients into mixing bowl and blend 5 secs speed 6. Scrape down and blend further 15 secs speed 6. Add more lemon juice, olive oil or pepper to adjust consistency and flavour according to taste. Set aside.

     

    Serve stirred through cooked pasta of your choice, cubed avocado, diced tomatoes, ham and parmesan cheese.

  3. Cook pasta according to recipe in Basic Cook Book:

    Place water into mixing bowl and bring to boil 10-12 min / 100C / speed 1.

    Add salt (if using) and dried pasta through hole in mixing bowl lid and cook according to the time indicated on your pasta package / 100C / speed 1, or until al dente.

    Drain (reserve some of the cooking water) and pour into serving bowl or thermo server.

  4. To Serve
  5. Stir pesto, raw diced tomatoes and cubed avocado through pasta.

    Add grated parmesan cheese to taste. I like lots stirred through and extra on top.

    You may want to stir through some of the reserved cooking water if required. 

    Season with salt & pepper if required. 

Tip

For variations, combine herbs and rocket e.g. parsley, coriander or basil

Add diced or shredded cooked chicken, ham, sliced cooked salami/pepperoni or other meat for a heartier meal

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.
