Ingredients
PASTA SAUCE
- 12 sprigs flat leaf parsley, leaves only
- 1 brown onion, quartered
- 4 to 6 garlic cloves, peeled
- 2 tablespoons olive oil
- 2 level tablespoons Oregano
- 100 grams pitted kalamata olives, halved lengthways
- 1 medium zucchini, cut in half lengthways then into 3 cm slices
- 440 grams tinned Italian tomatoes, undrained
- 2 tablespoons tomato paste
- 1 level tablespoon sugar
- 150 grams Fetta Cheese, cubed
- Salt & Pepper optional
PASTA
- Cooked pasta to serve with sauce

1. Place parsley in TM bowl, chop 3 secs / speed 7 then set aside
2. Place onion and garlic in TM bowl, chop 3 secs / speed 7 scrape down sides of bowl
3. Add oil, oregano and halved olives to TM bowl, simmering basket on and saute 5 mins / Varoma / "Counter-clockwise operation" / speed 1 scrape down sides of TM bowl
4. Add zucchini, undrained tomatoes, tomato paste and sugar to TM bowl, simmering basket on and cook 15 mins / 100 C /"Counter-clockwise operation" / speed 1
5. Place in Thermoserver and gently fold through the Feta cheese
6. When ready, serve over cooked pasta and sprinkle with reserved parsley
METHOD:
Tip
Simmering basket is used to catch bubbling hot liquid from splattering out of the top of the lid when cooking.
Add chopped chilli for extra heat if preferred with the onion and garlic step.
