Tomato Pasta Sauce
- 2 celery stalks, cut into 5 cm pieces
- 1 clove garlic
- 1 medium-sized red onion, quartered
- 50 g olive oil
- 700 g tomato passata
- 100 ml water
- 1 handful fresh basil leaves, (about 15 g)
- ¼ tsp salt
- ⅛ tsp sugar
- Freshly ground black pepper
- 1 dried bay leaf

- Place 2 celery stalks, roughly cut into 5 cm pieces, in mixing bowl, place measuring cup on lid, then chop 3 sec/speed 5. Transfer to a bowl and set aside.
- Add 1 clove of garlic to mixing bowl, and finely chop 4 sec/speed 7 with measuring cup on lid. Transfer to a small bowl and set aside.
- Place 1 medium-sized red onion, quartered, in mixing bowl, then chop 4 sec/speed 5 with measuring cup on lid. Scrape down sides of mixing bowl with spatula.
- Add 50 g olive oil then, without measuring cup, cook 10 min/105°C/speed "Gentle stir setting" until onions are softened and translucent.
- Add reserved chopped garlic then, without measuring cup, cook 3 min/110°C/speed "Gentle stir setting" .
- Add 700 g tomato passata. Shake about 100 ml drinking water in the emptied passata bottle (lid on) to loosen the remaining passata. Add this water and passata mixture to the mixing bowl.
- Add reserved chopped celery, handful of torn basil leaves (about 15 g), ¼ tsp salt (more or less depending on your taste), ⅛ tsp sugar, freshly ground black pepper and 1 dried bay leaf. Gently stir with spatula.
- With measuring cup on lid, cook 60 min/80°C/speed "Gentle stir setting" . During cooking, temporarily increase speed to speed 1.5 for a few seconds occasionally if sauce looks like needs more mixing.
Tip
Epicure Italian Passata (available from Ocado) is really nice.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
