Lemon Butter
- 3 large lemons (or 4 small lemons), rind and juice
- 320 grams raw sugar
- 3 eggs
- 45 grams Butter

1. Cut the yellow rind off the lemons.
2. Add rind to TM bowl and mill for 5 seconds, speed 8.
3. Scrape down sides and mill again for 5 seconds, speed 8.
4. Add sugar and mill for 10 seconds, speed 9.
5. Insert butterfly.
6. Add the juice of the lemons, eggs and butter then cook: 80 degrees, 14 minutes, speed 3.
7. Sterilise a 500ml jar while lemon butter is cooking.
8. Once cooked pour into jar, place the lid on and turn upside down. When cool, store in fridge.

I had trouble with my butter being quite runny for my first batch. Tastes amazing though!
Second batch set much better - I used less lemon juice and 1 egg yolk and 2 whole eggs.
Third batch the best yet - lemon and lime juice with just a touch of rind (didn't not include it in my first 2 batches) and 2 egg yolks with 1 whole egg 😊😊😊😊
Such a great curd recipe. My preserve-loving daughter thinks this is the best one! We with limes from our garden, it made more than a 500ml jar. Really, really good spread on grilled hot cross buns
This is just the right flavour for a not too sweet version

I made this. Very nice. Use less sugar, 260 grams. 2 bottles.
So easy and very delicious. Second time I made it I used 4 biggish lemons instead of 3 and it was so very lemony (in a good way)! Great way to use up lemons.
