Ingredients
Strawberry Sweet Chilli Sauce
- 2 long red chillies, Cayenne pepper
- 2 birds eye chillies, reduce to 1 for mild or omit for extra mild
- 8 garlic cloves
- 1 tbsp ginger paste
- 500 g Fresh strawberries, you can leave the leaves on
- 500 g sugar raw, can use coconut, note: sauce will turn more brown in colour
- 250 g water
- 250 g rice wine vinegar, can use white vinegar
- 1 tsp sweet paprika
- 2 tsp salt
- 4 tbsp Corn Flour
- 2 tbsp fish sauce
- 2 tbsp lime juice

- Place chillies, garlic and strawberries into bowl. Chop 5 sec / speed 6. Scrape down bowl.
- Add sugarm water, vinegar, paprika and salt to the bowl. Cook 25 min / 100C / speed 2. Take MC off and place simmering basket on top of lid.
- Mix corn flour with cold water to make a slurry and add to the bowl. Cook for 5 min / 100C / speed 2.
- Optional: blend 20 sec / speead 8 for a smooth texture.
- Add fish sauce and lime juice. Mix 10 sec / speed 3.
- Pour into sterlised jars while hot. Or allow to cool before pouring into plastic sauce bottle.
Tip
Can be stored in the fridge for up to 3 weeks in sterlised air tight jar.
Can be stored in the freezer for up to 6 months in freezer-safe container.
Can have 6+ month shelf life if you do canning process (in boiling water bath for 10 minutes).

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
