Ingredients
Fresh Pineapple Salsa
- 10 sprigs coriander, leaves only or to desired taste
- 1 red onion, cut in half
- 4 Jalapeño chillies, cut in half (deseeded)
- 1/2 red capsicum, cut in quarters
- 4 Roma tomatoes, diced
- 400 grams fresh pineapple, cut into 5cm pieces
- 2 level tbsp lime juice
- salt
- pepper, ground

- Place the coriander into the "Closed lid" and chop 5 secs/speed 6. Transfer into a large bowl and set aside.
Place red onion, jalapeno chillies and capsicum into the "Closed lid" and chop 3 secs/speed 4. Check the consistency to ensure it is still chunky. Repeat if a finer consistency is preferred, however, take care not to make it into a liquid. Transfer into the bowl with the coriander and set aside.
Place the fresh pineapple into the "Closed lid" and chop 3 secs/speed 4.
Transfer into the bowl with the other ingredients and then gently mix through the diced tomatoes.
Transfer the contents of the bowl to the varoma dish to strain any excess liquid and then move to the presentation bowl (see tips).
Season with salt and pepper.
Just before serving, pour the lime juice over the top of the salsa for that zesty flavour.
Tip
To really impress your guests, serve the salsa in a fresh pineapple bowl.
To do this, simply stand the pineapple up, hold the stem and cut downwards removing approximately 1/3 of the pineapple. Ensure you leave the full stem attached for the best result. To remove the pineapple to make the hollow bowl, cut around the outer edge of the fruit, taking care not to cut through the skin - you don't want a leaky bowl! Make cuts into the fruit and use a metal spoon to loosen and scoop out the pineapple chunks. Pour out any excess juice and use paper towel to ensure the pineapple is completely dry. Then fill the bowl with the fresh pineapple salsa.
