Ingredients

Herb, Cabbage & Mushroom Salad

  • 1 lime, zest & juice
  • 100 grams EVOO (extra virgin olive oil)
  • 50 grams light soy sauce
  • 1 green chilli, seeds removed
  • 1 clove garlic
  • 1 fresh ginger knob
  • 100 grams mushrooms, sliced, thinly
  • 150 grams red cabbage
  • 150 grams White cabbage
  • 1/2 bunch Thai basil leaves
  • 2 sprigs fresh dill
  • 5 sprigs fresh mint
  • 100 grams red radishes
  • Salt and cracked pepper, to taste

Recipe's preparation

    Herb, Cabbage & Mushroom Salad
  1. Chop lime zest, garlic, ginger & chilli for 10 secs speed 10. Add the olive oil, soy & half the lime juice mix for 5 secs speed 10.


    Pour over the mushrooms to marinate.


    Add the remaing ingredients to the TM bowl & chop for 2-3 secs speed 5. Mix with the marinated mushrooms & serve straight away.

Tip

It's also great to mix in some bean shoots too!!

    Made this as a side salad - really nice flavour initially, but there was just so much liquid that it got soggy really quickly - will make this again, and will probably leave all liquids out till the very end if I can, and then maybe just use part of them - or serve it in a colander haha! But very refreshing, great for summer!

    Yes it does make alot of dressing so you could save some of it to marinate your mushrooms next time you make it & yes you do put in the rest of the lime juice with the other salad ingredients. Glad you liked it! tmrc_emoticons.)

    This was beautiful but mine had a bit too much liquid.  I didn't know what to do with the other half of the lime juice, so I put that over the top of the salad, probably shouldn't have.  Will be making this again Big Smile
