Soup
- 1 ltr chicken stock
- 25 grams long grain rice, rinsed
- 1 egg
- 1.5 tablespoons fresh lemon juice
- S & P to taste
- 2 teaspoons fresh mint, chopped
- 2 teaspoons parsley, chopped

I'm cooking this todayRecipe's preparation
1. Place stock and rice in "Closed lid" bowl.
2. Boil on Varoma / 15mins/sp2 "Counter-clockwise operation" , until cooked.
3. In a jug, whisk lemon juice and egg.
4. Ladle a cupful of the chicken stock mix into the egg/lemon mix, and whisk quickly to combine.
5, Set speed on unit to 3, "Counter-clockwise operation" and tip egg lemon mix into the soup, through the MC hole.
6. Stop whizzing the second all the egg/lemon mix is in the "Closed lid"
7. Ladle soup into bowls and garnish with mint and parsley.
Method
Tip
This is a very simple version of this soup.
It is light and very refreshing.
You can add whatever you like to it.
Shredded chicken is nice but remember the beauty of this dish is it's simplicity.

So good Monica, I added some poached chicken that I had precooked, yum
Very nice. I didn't have any chicken stock so I used the TM Vegetable stock, still fabulous. Husband also loved it.
My husband loves this - I add a lot more lemon juice
So unusual I had to try it and it is delicious.
