Ingredients
Soup
- 1 clove garlic, peeled
- 1 brown onion, peeled and quartered
- 20 g olive oil
- 1 tsp ground cumin
- 350 g carrots, peeled and roughly chopped
- 350 g sweet potato, peeled and roughly chopped
- 1000 g water
- 1 tablespoon Vegetable stock paste
- 100 g dried red lentils
- 2 tablespoons reduced fat sour cream, optional
- Coriander Sprigs, garnish
- black pepper, to taste
- toasted crusty rolls, to serve

1. Place garlic clove and onion into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
2. Add oil and saute 3 min/120C/speed 1.
3. Add ground cumin, carrots and sweet potato and chop 5 sec/speed 6.
4. Add water, stock paste and lentils and cook 25 mins/100C/speed 2.
5. Blend 1 min/speed 4-8, increasing speed gradually.
6. Divide between bowls, garnish with sour cream, coriander sprigs and pepper. Serve with toasted crusty breadrolls.
Tip
Any leftovers can be reheated and served the following day, or portioned and frozen for up to 3 month
Add dried chilli flakes to taste for a spicier version.

I love this recipe. It is extremely simple but gorgeous. I used little brown letils instead of red lentils which gives it more of a bite.

Delicious soup! Similiarly I double the garlic and sometimes substitute sweet potato for pumpkin, depending on whats at hand. Great recipe. Thanks for sharing.
Before blending, the soup looked really thin but when blended it thickened up and was delicious! Great recipe!
Delicious comfort soup, i used JAP Pumpkin as I didnt have sweet potatoes,add 2 garlic bulbs and topped it off with parsley & natural greek yoghurt to be super healthy.
