Soup
- 1 brown onion
- 3 Garlic cloves peeled
- 2 tablespoons coconut oil
- 1/2 teaspoon curry powder
- 500 grams Jap Pumpkin, Skin removed, roughly chopped
- 1 carrot, Washed and roughly chopped
- 500 grams vegetable stock
- 1 tablespoon Rapadura Sugar
- 4 leaves sweet basil
- 3 tablespoons coconut cream

Chop onion & garlic on speed 7 for 5 seconds
Add curry powder & coconut oil and cook 3 minutes, 100 d, speed 1
Add pumpkin & carrot and chop 15 seconds speed 7
Pour in vegetable stock and rapadura and cook for 20 mins, 100 d speed 1
Add basil leaves and blend 10 seconds speed 6.
Pour in coconut cream and slowly turn dial to 9 and blend for 20 seconds.
Devour!
Tip
If you like a stronger curry flavor, add a full teaspoon instead of half
