Ingredients

Creamy Coconut Vegetable Soup

  • 1 tablespoons coconut oil
  • 2 cloves garlic
  • 1.5 tablespoons Vegetable stock paste
  • 750 grams hot water
  • 1/2 large cauliflower, cut into florets
  • 2 Zucchinis, roughly chopped
  • 2 carrots, roughly chopped
  • 2 teaspoons ground turmeric
  • 1 can coconut cream, 400ml
  • 1 pinch cracked pepper, to taste
  • 1 pinch salt, to taste

Recipe's preparation

    Fill and boil kettle
  1. Place Garlic in bowl and chop 3 seconds/speed 7 (Scrape down sides of bowl and repeat if necessary)
  2. Add Coconut Oil and saute 3 mins /Varoma temp/speed 1
  3. Add Carrot to bowl and chop 3 seconds/speed 7
  4. Add Zucchini and Cauliflower
  5. Add Stock Paste, hot water, turmeric and cook 15 mins/100 degrees/ speed 2
  6. Add Coconut Cream and blend for 1 minute: turning to speed 5 then gradually increasing from speed 5 to speed 9
  7. Add salt and pepper to taste and mix on speed 4 for 10 seconds to combine
  8. Serve hot

Tip

Blitzing the Carrots will help them cook faster (no need with softer veggies)

Adding boiling water saves time with the recipe. If using cold water extend cooking time by 5mins in step 5

Can serve with dukkah for added flavour
