Ingredients

Egg Drop Soup

  • 2 tablespoon cornstarch
  • 1 teaspoon ground ginger
  • 1/4 teaspoon Garlic powder
  • 2 large eggs
  • 2 egg whites
  • 1/2 teaspoon toasted sesame oil
  • 3 green onions, sliced thin (about 1/4 cup sliced), plus extra for garnish
  • 1/4 cup whole-kernel corn or creamed corn (optional)
  • salt, to taste
  • black pepper, to taste (I use about 1/4 teaspoon)

Recipe's preparation

    A renowned Asian favourite, adapted to TM5 from Gimme some oven - Egg drop soup
  1. Closed lid"Closed lid" for 10 seconds speed 10. Whisk together the eggs and egg whites transfer to a measureing cup for easy pouring later.

  2. Add together chicken stock, cornstarch, ginger and garlic powder to bowl mix speed 4 until combined and no lumps remain. Closed lid"Closed lid" Gentle stir setting"Gentle stir setting" at 100 degrees, until boiling (10-15 minutes depening on the temperature of your stock before starting).

  3. Once the broth reaches a boil, stop thermomix. Then Gentle stir setting"Gentle stir setting" (no temperature) to stir the broth in a circular motion

  4. With lid on while Gentle stir setting"Gentle stir setting" slowly pour the whisked eggs into the soup to create egg ribbons. Drizzle in the sesame oil, green onions and corn (optional) until combined.

  5. Season with salt and pepper to taste, also adding a dash or two of more sesame oil if you'd like more of that flavor.

  6. Serve immediately, topped with additional green onions for garnish.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
