Ingredients
Bacon Potato Pasta Soup - Gluten Free
- 1 brown onion, quartered
- 2 cloves garlic
- 120 g Bacon Pieces, (or diced bacon)
- 20 g olive oil
- 1000 g liquid stock (chicken or ham), (or 1 L water + 2T stock concentrate)
- 2 Medium potatoes, peeled, cubed (not bigger than 1cm cubes)
- 3 medium carrots, peeled, cubed (same size as potato)
- 1 Stalk celery, strings removed, cubed (as above)
- 1/2 small red capsicum, deseeded, cubed (as above)
- 140 g tomato paste, approx
- 150 g GF small shell pasta
- black pepper to taste
- lemon zest, grated

- Add onion and garlic to TM bowl - chop 5 sec, speed 4.
Scrape down bowl. - Add bacon and oil - saute 100 deg, 5 mins, speed 1.
(If your veggies arent prepared, do it now) - Add liquid stock, prepared veggies, tomato paste and black pepper - cook on reverse "Counter-clockwise operation" , 100 deg, 20 mins, speed 1.
- CAREFULLY pour finished soup over pasta. Lid on. Find the parmesan cheese!
- Serve with grated lemon zest and/or parmesan cheese.
Tip
Based on Skinnymixers Bacon & Veg Soup.
Use any vegetables you have:
- zuchinni; mushrooms; broccoli stems; sweet potato; pumpkin; root vegetables etc
