Ingredients
- 1 small onion, peeled, halved
- 100 grams leeks, White parts only
- 30 grams Butter
- 500 grams Potato's, (peeled and cubed)
- 2 corn cobs, (raw, kernals cut off)
- 700 grams water
- 2 teaspoons veggie stock concentrate, (can substitute 2tsp stock powder)
- cream, (optional), to taste

Add onion and leeks to bowl, chop for 10 seconds, Speed 7.
Scrape down sides, and add butter and cook for 2 minutes, 100C, Speed 1
Add diced potato's, corn kernals, water and stock concentrate/powder. Cook for 25 minutes, 100C, Speed 1. Leave MC on.
Blend to smooth consistency, increasing the speed slowly from 1 to 8, approximately 30 seconds.
If desired, add cream to taste.
Preperation
Tip
Vary the blitzing time depending on desired consistency. 30 seconds will produce a smooth soup.

A nice thick soup, I added a bit of cauliflower too.
Have just made this and added a pinch of black pepper and cayenne and it is absolutely delicious
Made this yesterday, only thing different I did, was I added grated tasty cheese at the very end to give it a chowder type taste. It was really yummy!!
