- 1 cup of firmly packed grated parmesan cheese
- 3 leeks, white part only, roughly chopped
- 1 full head of garlic, with the top sliced off
- 2 level tablespoons of olive oil
- 2 medium pototoes, no need to peel but roughly chopped
- 1 400 gram tin of cannellini beans, rinsed
- 2 level tablespoons of vegetable stock
- 1000 mls of water
- 1/4 level teaspoon of salt
- 1/4 level teaspoon of ground black pepper

Crisps
2 tays lined with baking paper, make 8 equal piles of parmesan allowing room to spread, bake 180 degrees till melted and slightly golden - around 15 minutes - cool and place on paper towel to absorb the oil from the cheese
Soup
Place the leeks and garlic in a baking dish and drizzle over the olive oil - bake 180 degrees for 20 minutes or until soft
When cool squeeze the garlic over a bowl, a bit messy but fun
Add garlic, potatoes, stock and water to bowl - cook 15 minutes 100 degrees, speed 1 MC on
Add roasted leek and cannellini beans, salt and pepper and cook 20 minutes, 100 degrees, speed 1
Blend 2 minutes - slowly increasing the speed to 8
This is a mild and fresh tasting soup complimented with the parmesan crisps

Very good. Not a curry, just a smooth, creamy soup enhanced with the tangy, parmesan crisps, which I'd snack on at any time.
