Ingredients

  • 1 clove garlic, Peeled
  • 1 onion, Halved or quartered
  • 15 grams oilve oil, Or oil of choice
  • 500 grams Roasted Pumpkin pieces, Skin can be removed but not necessary
  • 100 grams leeks, Roughly chopped
  • 100 grams carrot, Roughly chopped
  • 250 grams water
  • 20 grams TM Stock Concentrate
  • 30 grams sour cream, Or coconut cream if preferred
  • Cracked Pepper to taste, For serving

Recipe's preparation

    1. Roast pumpkin with skin on for 20 mins in oven 180 degrees. ( this step can be skipped if using raw pumpkin)
  1. 2. Place onion and garlic in Thermomix bowl And chop 3 secs/sp 7

  2. 3. Scrape down sides of bowl and repeat step 2 if required

  3. 4. Add oil and sauté, 2 mins/100/sp 1 mc off

  4. 5. Add pumpkin, leeks and carrot and chop 15 secs/sp 7. Scrape down sides of bowl

  5. 6. Add water and stock and cook 20mins/100/sp 1

  6. 7. Add cream and blend 30 secs/ sp 5 and gradually increasing to sp 9. Repeat if necessary. 

  7. 8. Serve immediately in soup bowls with cracked pepper to taste. 

Tip

Recipe can be frozen in individual serves. Increase preparation time to 25 mins of roasting of pumpkin required. For a thinner consistency, add more water
