- 500 g plain flour
- 20 g tapioca flour
- 20 g baking powder
- 10 g caster sugar
- 70 glard or butter
- warm water to bind.
- Filling
- 250 gRaw or cooked prawns
- 20 g Pork, fat
- 20 g soy sauce
- 5 g sesame oil
- 2 shallots
- 40 g bamboo shoots
- Dipping sauce
- 60 g peanut oil
- 1 garlic clove
- 5 g fresh chilli
- 20 g soy sauce
- 5 g lemon juice
- 10 g tahini

Make the dough:
1.
Grind tapioca 30 seconds
speed 10.2.
Add all other
ingredients(except water), mix 5 seconds speed 7.3.
Set timer for 2 mins on
interval setting (wheat symbol) with blades rotating add water a little bit at
a time, until dough forms.4.
Wrap dough and place in
fridge to rest for 10 mins.Filling:
1.
Place all ingredients in TM
bowl, pulse on Turbo 4-5 times or until
minced and mixed.2.
Roll out dough thinly,
place small amounts of filling in centre and wrap up.3.
Place dumplings in Varoma
tray and steam for 20-30 mins on Varoma temp.4.
You can cut cooking time by
placing water onto bowl prior to steaming dumplings, this then takes about
15-20 mins. Remember to have 1 litre of
water in Bowl for steaming.Chilli Sauce:
1.
Place chilli and garlic
into TM bowl, chop 3 seconds on speed 10.2.
Add all other ingredients
and cook for 3 mins on speed 1 on 100◦C.
