Ingredients

Mexican Pulled Pork

  • 2000 grams pork sholder, Boneless and rindless
  • 40 grams garlic cloves, Peeled
  • 1 portions onion, Peeled, quartered
  • 2 portions oranges, Peeled and quartered
  • 500 grams liquid vegetable stock
  • 1.1 litres water
  • 20 grams Mexican Spice Mix

Recipe's preparation

    Method
  1. Wash and dry the pork.


    Rub half of the spice mix over the meat.


    Place a trivet in the deep Varoma basket. (This is to stop the meat covering the steam vents.)


    Add meat on top of the trivet, cover with varoma lid and put aside.


    Place peeled garlic cloves and onion into TM bowl. Chop 4 sec/speed 9.


    Scrape down bowl.


    Add the oranges to the bowl. Puree 5 sec/Speed 9.


    Scrape down the bowl, add 500g water and 500g liquid stock to the bowl.


    Place the TM lid on the bowl and stack the varoma on the lid. Cook 99 min/Varoma/Speed 2.


    Add 400g of additional water to the bowl. Cook 50 min/Varoma/ Speed 2.


    Add a further 300g of water to the bowl. Cook 40 min/Varoma/ Speed 2.


    Transfer the pork to a Thermo Server and use 2 forks to shred the meat.


    Pour out the orange liquid from TM bowl into jug. Measure out about two cups of liquid and put in TM bowl, add the remainder of your Mexican seasoning (about 20g) and blitz on speed 9 for 5 seconds.
    Pour liquid over the shredded meat and stir it through until it is well combined.
    Enjoy!

Tip

I used a store bought Mexican mix but you use a homemade one or use spices and herbs you enjoy.
Enjoy on burritos or a burger!
