Polenta bread
- 4 portions eggs
- 200 grams buttermilk
- 100 grams mineral water, sparkling
- 100 grams vegetable oil
- 1 portions frozen spinach leaves, Defrosted
- 200 grams feta cheese, Crumbled
- 1 to taste salt
- 1 level tbsp baking powder
- 110 grams polenta
- 130 grams plain flour
- 1 portions sesame seeds

Add eggs, buttermilk, mineral water and oil (wet ingredients)."Counter-clockwise operation" 5 seconds on speed 5.
Add crumbled feta, defrosted spinach (drain on paper towel if wet) and salt to taste. Remember feta is salty so just a pinch should be enough. "Counter-clockwise operation" 2 seconds speed 5
Add baking powder, polenta and flour. "Counter-clockwise operation" speed 6 for 6 seconds.
Pour into greased tray, sprinkle with sesame seeds and bake in the oven for approx 30 minutes (should be lightly golden and skewer comes out clean).
Let it rest in tray for 5-10 minutes. Serve warm or place in air tight container in the fridge.
