Black swan Cafe's Corn fritters
- 100 g bacon, diced
- 1/2 cans canned sweet corn kernels, drained
- 1 red onion, peeled and halved
- 2 eggs
- 20 g Tasty cheese, cubed
- 20 g Parmesan cheese, cubed
- 60 g self- raising flour
- 20 g olive oil
- 20 g Milk
- Salt and pepper, to taste

- 1- Place cheeses into bowl and grate 3 seconds, speed 9. scrape down the sides of the bowl.
2- Add onion to bowl and chop 3 seconds speed 5. scrape down the sides of the bowl.
3- add all other ingredients to mixing bowl and mix 10 seconds, "Counter-clockwise operation" speed 3. Depending on the size of your eggs, you may need to add a little more SR flour (20-40g) and mix for another 10 seconds,"Counter-clockwise operation" speed 3.
4- Heat pan on medium heat and spray with cooking oil. create patties with approx 2 heaped TBS per fritter. Cook for 3-4 minutes each side or until golden brown. These are delicious on their own , or even better with an avocado salsa or poached egg. They freeze beautifully and are even amazing cold.
CAN BE MADE GF WITH GF BACON AND FLOUR
