Ingredients
Chicken & Hidden Vege Sausage Rolls
- 2-3 skinless chicken thigh fillets, cut in half
- 1 brown onion, cut in half
- 1 carrot, cut into 4 cm chunks
- 1 zucchini, cut into 4cm chunks
- 4 sprigs parsley
- 2 level tsp Vegetable stock paste
- pinch salt
- 4 sheets Ready made puff pastry

- 1. Remove puff pastry sheets from freezer & set 4 sheets aside to thaw.
2.Place 1.5 thigh pieces into Thermomix bowl & mince using Turbo/2 sec/1 time. Set aside inot a bowl.
3. Place other 1.5 thigh pieces into bowl - Turbo/2 sec/1 time.
4.Transfer into bowl with other minced chicken.
5.Place onion halves, zucchini & carrot pieces into Thermomix bowl with parsley - Chop 3 secs/speed 5.
6.Repeat if necessary until chopped finely.
7. Add vegetable stock paste & salt - mix 12 sec/speed 5.
8.Add in minced chicken to vegetable mixture - combine for 20 secs/speed 5.
9.Cut 4 pastry sheets in half. Line the centre of each pastry half with chicken vegetable filling, leaving enough space to fold pastry over to form a cover.
10.Pinch edges together - at ends & side of each pastry half.
11.Whisk one egg in a cup & brush egg over pastry. Sprinkle with sesame seeds.
12.Bake in moderate oven 180 degrees for 20-25 minutes until chicken is cooked & pastry is golden brown.

Tip
For an Asian flavour - substitute parsley for coriander & add 1-2 teaspoons of sweet chilli sauce to chicken vege mixture
