Recipe's preparation

  1. 1. Pre-heat oven to 200 degrees

    2. Line 2 baking trays with baking paper

    3. Place cheeses (150g) into mixing bowl and grate 10 sec/speed 8. Transfer into a bowl and set aside.

    4. Place garlic (2 cloves) and spring onions (50g) into mixing bowl and chop 3 sec/speed 7.
Scrape down sides of mixing bowl with spatula.

    6. Dice the choko (30g) on Speed 5 for 3 seconds. Repeat if too chunky.

    7. Sauté for 5 min at 100 degrees speed 4 or until just cooked.

    8. Return cheese to bowl and stir for 2min, then reverse for another 2min or as needed to mix it all up evenly.

    9. Taste and add as much salt/stock as desired

    10. Cut dough into 16 circles (approx. 10 cm diameter).

    11. Leaving a 3 cm border, spread 1 teaspoon of no-mato sauce onto each circle.

    12. Top with equal amounts of filling.

    13. Sprinkle pear on top.

    14. Fold dough over to form a half circle, ensuring filling is enclosed.

    15. Press edges together with a fork to seal.

    16. Place onto prepared baking trays and brush with milk.

    17. Bake for 10-15 minutes (200°C), until golden brown, then serve warm.

Tip

Make the stock, no-mato sauce and real deli chicken first – the stock takes half an hour, the deli chicken takes 3.5 hours and the no-mato sauce takes half an hour.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
