Ingredients
Soda bread
- 2 spring onions/shallots, roughly chopped
- 500 g plain flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 300 g buttermilk, (330g if using store-bought buttermilk)
- crème fraiche, to serve
- Smoked Salmon, to serve
- fresh chives, finally chopped, to garnish

Preheat oven to 200°C. Line a baking tray and set aside.
Place spring onion / shallots into the mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.
Add flour, bicarb soda and salt and mix 5 sec/speed 5.
Add buttermilk and knead 30 sec//until just combined.
Transfer dough onto ThermoMat or lightly floured surface, shape into about a 15cm round and place on prepared baking tray. Cut a cross in the top.
Bake for 45-40 minutes, or until golden brown and sounds hollow when tapped on the bottom.
Slice and serve, topped with crème fraîche, smoked salmon and garnished with fresh chives.

If you use homemade buttermilk for this recipe you will need 300g, if you are using store-brought buttermilk, increase the amount to 330g.
Soda bread can be served warm or cold.

Is the bread meant to go a pale green? I'm guessing that's why it's a St Patrick's day spesh! If not, maybe I did something wrong?
Quite dense but really yummy flavour.
