Ingredients
Tart
- 20 grams Butter
- 100 grams Frozen spinach
- 1 leek, Trimmed and Thinly Sliced
- 120 grams Danish Fetta
- 100 grams ricotta
- 100 grams pure cream
- 2 eggs
- 1 tsp Vegetable stock paste
- 2 sheets Puff Pastry or TM Rough Puff

1. Weigh 20grams Butter into Mixing Bowl and 100grams Frozen Spinach. Saute for 2 minutes, 100deg on Speed 1.
2. Add thinly sliced Leek and Cook for 3 Minutes, 100deg, Speed 1.
3. Add the remaining Ingredients - Crumbled Fetta, Ricotta, Cream, Eggs and Stock Paste and Mix on Speed 5 for 30 Seconds.
4. Line 12 Muffin Pan with Pastry and fill with Leek and Spinach Mixture.
5. Bake in 180deg oven for 20 minutes, or until cooked through.
Tip
I use a cup to cut out the Pastry in circles or if you prefer a rustic look, cut the pastry into squares.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Yummy. Will be making again. NB to self: this fits perfectly into my 6 large muffin tin for 25 mins. Used cream cheese instead of ricotta and sour cream.

Delicious, I didn't have leek or ricotta - so like one of the other ladies I substituted the leek for corn, zucchini and spring onions and I just increased my cream and feta amounts for the ricotta.
These are delicious, easy to make and cheap, made them for work lunchs
Strangely I made this yesterday and when I looked it up today, it was the same recipe title, ingredients and method except 100 grams Ricotta had been added to the on-line recipe. I must have printed it out some time ago. The tarts were very nice with salad and we'll make them again and try some of the other variations suggested by others. Thanks for the recipe.
