Neapolitan Pizza Dough

  • 370 grams water
  • 2 grams dried instant yeast
  • 615 grams Baker's Flour
  • 18 grams salt

Recipe's preparation

    Preparing the dough
  1. Weigh in water

  2. Weigh in yeast

  3. Heat water and yeast 2min/37deg/sp1

  4. Add flour

  5. Add salt

  6. Mix 6sec/speed 6

  7. Knead 3 mins

  8. Set aside to prove for 4 hours, in an oiled glass bowl, covered with cling film.

  9. Dividing and balling the dough
  10. Divide dough into 4 equal parts

  11. Take one side of the dough, and fold it, across to the other side.

  12. Turn dough 90 deg to the right

  13. Repeat folding and turning 3 more times

  14. Place seams down on the bench and pull the dough towards you. To create surface tension on the outside of the dough ball. Turn 90 deg to the right and pull towards you. Repeat till you have a smooth dough ball.

  15. Pinch the seam and set aside to rest in a covered container for 2 hours. Repeat with other dough balls

  16. Opening your bases
  17. Take a dough ball and carefully press out your pizza bases, leaving a 1cm border around the edge of you base. You can pick it up and stretch, making sure to leave the edge untouched.

  18. Sprinkle semolina on a pizza peel, and place base on top.

  19. Top your pizza with desired topping and cook for approximately 1 min in a 350 deg delcious pizza oven.

Tip

This is calculated for 4 x 250gr pizza bases with a room temp proving temp of 19 deg celcius.
