Ingredients

  • 35 grams Almonds Whole
  • 15 grams Linseeds (Flax seeds)
  • 65 grams cashew nuts, raw
  • 40 grams sesame seeds
  • 2 level tablespoons Thyme leaves (fresh)
  • 1/2 teaspoon sea salt flakes, plus extra for topping
  • 15 grams Maple syrup
  • 10 grams coconut oil, melted
  • 1-2 tablespoons water

Recipe's preparation

    Making the dough
  1. Place almonds in mixing bowl and grind 8-10 sec/speed 7. Repeat if necessary to get a fine texture. Set aside.


    Add linseeds to mixing bowl and grind for 8-10 sec/speed 7.


    Return almond meal to bowl. Add cashews. Pulse a couple of times on Closed lid/Turbo, until mixed.


    Add the sesame seeds, thyme, the 1/2 teaspoon salt, maple syrup and coconut oil and Closed lid/Turbo a couple more times, till combined.


    Add the water, 1 tablespoon at a time, while mixing on speed 3, until the mixture just begins to stick together.


    Form the mixture into a ball, wrap in plastic wrap and refrigerate for 1-2 hours or overnight.

  2. Baking the crackers
  3. Pre-heat the oven to 160°C, and line a couple of baking trays with baking paper.


    Remove dough from the fridge, put it between 2 sheets of baking paper and roll out to about 3mm thickness (Note: you do want it to be thin, but not too thin or you wont be able to lift them).


    Using a sharp knife, cut the crackers into your desired shape.


    Using a pallete knife, lift the crackers and place on prepared baking trays, leaving about half a centimetre between them.


    Bake the crackers until the edges look toasted, about 10-12 minutes. Remove from oven and sprinkle with a little extra salt, if desired, then allow to cool completely before removing from tray.

Tip

Note - preparation time given does not include time for chilling dough.

    Congratulations on an excellent recipe.  Our whole team got to taste your recipe tonight, as an example of a recipe community contribution.  My colleague, Rita (picture left) presented them beautifully.  She mentioned tweaking with the addition of garlic and fennel seeds.  You may like to try adding those ingredients one day if you feel curious.  The crackers disappeared very quickly.  We couldn't resist!  Big thanks from Hobart.

    Taste sensation! Just made the dough and it tastes awesome!! You should be on the tv show Masterchef with knowing how to put those flavours together! I was scraping the bowl and licking the spatula like I'd never been fed: hope I can pull off the actual rolling/baking of these bad boys! Very excited! Thankyou for the recipe!!
