Ingredients

  • 1/2 red onion
  • 200 grams sweet potato, cubed
  • 100 grams feta cheese, cubed
  • 100 grams chorizo sausage, diced
  • 100 grams peas (defrosted if frozen)
  • 6 eggs
  • 50 grams Cream (optional)
  • 1 tablespoon TM stock concentrate

Recipe's preparation

  1. Preheat oven to 180 deg. Line 12 muffin tins with baking paper muffin wraps

    Add onion, sweet potato and fetta to bowl. Chop 4 seconds Speed 5.

    Add remaining ingredients and mix 10 seconds Rev Speed 3.

    Divide mixture between the muffin wraps and bake 20 - 25mins.

    Serve hot or cold 

    I have tried this recipe in greased muffin tins and with folded baking paper but find that the muffin wraps get the best outcome.

    Made these for our TM charity night and they were a hit. I used muffin papers, next time I would spray them first so the cooked mix doesn't stick.

    Had a little difficulty with this one. Used Paper Muffin Wraps and my runny mix was a little hard to spoon in without making a real mess but I did it in the end. The end result tasted really salty to me. Next time I will chop up the Chorizo into much smaller pieces. It does have potential though - wish I was more experienced!
