Ingredients

Dough Starter

  • 10 g Yeast, 2 sachets
  • 5 g sugar raw
  • 40 g Milk

Dough

  • 30 g sugar raw
  • 460 g plain flour
  • 210 g Milk
  • 120 g Butter
  • 1 teaspoon salt
  • 1 egg yolk
  • 1 egg white, for glazing

Filling

  • 2 onions, peeled and halved
  • 100 g cheese, gruyere
  • 150 g bacon, finely sliced
  • 30 g oilve oil

Recipe's preparation

    Method Dough Starter
  1. Combine yeast, 5g sugar, 40g milk. Mix for 3 mins, 37 degrees, speed 1.

  3. Add butter, 210g milk, 30g sugar to bowl with dough starter. Mix 3 min, 37 degrees, speed 1.


    Add flour, salt and egg yolk.


    Mix 10 sec, speed 6.


    Knead 3 min, lid closed, interval setting. (Closed lid,dough mode).


    Sprinkle with flour, cover and prove for 30 - 60 minutes. (This may be done in the mixing bowl, or remove dough from bowl and wrap in Thermomat).


    When doubled in size, shape into 5 sausage shapes. Cut each sausage into 12 pieces. Flatten each piece into circular shape, fill with filling, shaping as a ball and place on oven tray, lined with baking paper, with the seam downwards.


    Bake in preheated oven 200 degrees C for 10 - 15 minutes unitl golden brown.

  4. Filling
  5. Grate cheese 6 sec, speed 7, set aside.


    Chop onions 2 sec, speed 7. Add oil and saute 3 min, 100 dgrees, speed 1.


    Add hand chopped bacon and cheese and cool in fridge until dough is ready to shape.  

Tip

The dough is easier to fill if the filling is cold and not runny.

Piroshki may be frozen and reheated.

    My Mum just gave me my Latvian Great Grandmothers Piroshki recipe and I was thinking about how to convert it to Thermomix. This recipe is exactly that - thank you! The only difference is she didn't add cheese.

    I did have some trouble with the onion - for some reason I always end up pulping it and ended up with heaps of liquid. I had to strain the mix a couple of times. Next time I'd probably cut the onions by hand (yuck!).

    I ended up with about 35 Piroshki and they were lovely. My husband and kids loved them. Thank you for the recipe.

    Very good. A bit different to how my grandmother made but very tasty. I made larger piroshki. It would be easy to change the filling. would also be great for the lunch boxes. My sone loved them.
