- 250 g Pumpkin, cubed
- 10 g olive oil
- 1 piece whole medium-sized zucchini, peeled
- 200 g Colby cheese, grated
- 1 tsp salt
- 40 g Butter
- 3 pieces eggs
- 80 g plain flour

1. Pre-heat oven to 220C.
2. Sautè cubed pumpkin with olive oil, 5 min/Varoma/speed 1.
3. Allow bowl to cool for a while. Then add zucchini and grate 5 sec/speed 6.
4. Add cheese, salt, butter, eggs and mix 5 sec/speed 3.Mix in flour 5 sec/speed 4.5. Pour mix into mini muffin tins. Bake for 10-15 mins, or until slightly browned.
Tip
Great for kids lunchbox.
