Ingredients

Sausage Bread Cups

  • 12 slices multigrain bread-approx2-3 slices, Remove crusts and freeze
  • 20 g olive oil
  • 1 --- eschalot, Peeled
  • 2 slices bacon, Rindless and Shortcut
  • 250 g Beef mince
  • 1 carrot
  • 1 egg
  • 1 tablespoon Parsley leaves
  • 60 g smokey BBQ sauce, Meat on the menu cook book p39
  • 50 g grated cheese
  • 6 cherry tomatoes, Halved
  • Salt and pepper

Recipe's preparation

    Sausage Bread Cups
  1. 1  Preheat oven to 180*C.   Lightly grease 12 large muffin pan recesses.

    2  Using a rolling pin, flatten each bread slice.  Use to line recesses.

    3  Lightly spray with oil and bake for 5 mins, until firm to touch (like toast)

    4  Place frozen crusts in TM bowl chop for 10 secs on speed 6.  

    5  Remove bread crumbs and put aside.

    6  Put eschalot, carrot and bacon in TM bowl and chop for 3 secs on speed 6.

    7  Add oil and saute for 2 mins, 100* speed 1.

    8  Add mince, egg, parsley, bbq sauce and 50g bread crumbs to TM bowl.  Season to taste.

    9  Mix to combine for 10 secs on speed 5.

    10 Spoon mixture evenly among bread cases.

    11 Sprinkle top of each with grated cheese.

    12 Press half a tomato on each, cut side up.

    13 Bake for 25 mins.

    14 Allow to cool in pan. 

Tip

 Great snack for lunch boxes.

    Made these for dinner tonight. The family really liked them and i found them easy to make, although i used tomato sauce instead of BBQ (not a fan) and they came out fine.
