Ingredients

  • 300 g Tasty cheese, Grated
  • 1 red onion, quartered
  • 350 g zucchini
  • 6 rashers shortcut bacon, sliced
  • 250 g Self Raising Flour
  • 80 g canola oil or vegetable oil
  • 5 eggs
  • 310 g can of corn kernels, drained
  • 1 tablespoon Dijon or wholegrain mustard

Recipe's preparation

  1. Pre-heat oven to 180°C

    1. Grate the cheese in 2 seperate batches and set side.

    2. Add the onion, zucchini and bacon to the TM bowl and chop speed 4 for 5 seconds. Scrape down the bowl.

    3. Add 200g of the cheese along with the eggs, flour, corn, oil and mustard to the bowl. Mix speed 5, Counter-clockwise operation"Counter-clockwise operation" , 10 seconds.

    4. Spoon the mixture in to muffin cases or well greased muffin trays and top each muffin with the remaining grated cheese.

    5. Bake for 3 to 40 minutes.

     

Tip

Serve warm for a delicious hearty breakfast. Also nice cut in half and spread with avocado and topeed with a squueze of fresh lemon juice. Also nice spread with perfect butter-vegemite ratio.

These muffins are ok to freeze but they do lose some of their texture when defrosted, still tasty though!

    Excellent, subistuted baked sweet potato for the zuchini as i did not have any and a pinch of cracked pepper. Easy recipe to follow.

    I found the mixture filled up the bowl too much and took a lot longer than the time listed to mix.  I added some milk as it seemed a little dry.  Plus dried parsley, salt and pepper
