- 4 pieces bacon rashes
- 350 g plain flour
- 15 g baking powder
- 15 g sugar
- 1 tsp salt
- 200 g Cheddar cheese, or a mix or cheddar & parmesan
- 3 spring onions, chopped into 5cm sections
- 1 bunch fresh dill
- 1 zucchini, roughly chopped
- 200 g Butter
- 200 g Milk
- 3 eggs
- 60 g mustard

Chop Bacon and fry in dry pan until crispy, drain on paper towel and set aside.
Weigh into TM bowl - plain flour, baking powder, sugar and salt.
Mix for 5 secs on speed 5
Set aside in a large bowl
You DO NOT need to wash the bowl out between any of the following steps!
Place cheeses in TM bowl and grate 10 secs/sp 6
add to the flour mix in large bowl
Place in bowl spring onions, handful of fresh herbs (you can bulk out the dill with some parsley and spinach) and zucchini
Chop 1-2 secs/sp 6
Add to the large bowl
Melt butter - 1 min 30 secs/60deg/sp 4
add milk, eggs and mustard
mix 10 secs/sp 4
Pour into the large bowl with flour, cheeses, zucchini and bacon - fold until just combined
Spoon into mini or large muffin cases and bake at 180deg - approx 20 mins for mini and 25-30 mins for large

Tip
this mix made about 36 mini muffins and 3 large ones. They go quickly in kids lunch boxes and can be frozen.

Really really tasty!!
It made 21 med to large muffins (not as big as a cafe style muffin)
I didn't have mustard so threw in some mayo and a hint of curry powder, also replaced dill with dried mixed herbs. Recipe has been saved to fav's and will definitely be making a regular appearance )

Yum, yum, yum. Made these for the kid's school lunches. I used a brown onion instead of spring onion and I didn't have any dill so I used some dried parsley and chives. Definitely will be making again.

Delicious!! I didn't have spring onions, so I substituted it for leek. Also used dried dill instead of fresh. I used large (cafe style) muffin papers and got 14 from a batch (and they didn't stick to the paper!) So happy I made a second batch for the freezer. Thanks for sharing!

I love the flavour. I added some silver beat instead of spinach and dried dill instead of fresh.
