Ingredients

Zucchini, Ham and Corn Bites

  • Coconut Oil Spray, for greasing
  • 140 g zucchini, cut into pieces
  • 50 g Frozen Corn Kernals
  • 100 g Shaved Ham
  • 2 tsp Vegetable stock paste
  • 30 g arrowroot flour
  • 0.5 tsp bicarbonate of soda
  • 30 g Coconut Flour
  • 4 eggs

Recipe's preparation

  1. Preheat oven to 180°C. Liberally spray 2 x 24-hole mini muffin trays with coconut oil and set aside.

    Place zucchini, corn and ham into mixing bowl and chop 3 sec/speed 5.
  2. Scrape down sides of mixing bowl with spatula. Add all remaining ingredients and combine 20 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.
  3. Transfer mixture into prepared trays and fill each mould half way. Bake for 20 minutes (180°C) until puffed and golden. Transfer onto a wire rack to cool before serving.

Tip

You can replace shaved ham with other cold meats of choice or smoked salmon.

You can buy coconut flour from health food stores, bulk food stores and most major supermarkets in the health food aisle.

    What temperature should this be cooked on? And are these normal muffin or mini muffin size?

    Going by the Monash low fodmap coconut flour is a no no. Also be careful with corn.

    Lonna: I think pull the eggs back to only two as it is the coconut flour that requires extra eggs. Substitute the coconut and arrowroot for whatever flour you wish to bake with; I think using s.r flour would mean you can also omit the bi-carb soda. If these sit between muffin texture and frittata texture I don't think it will be a bad thing. Smile

    Good although I will go easier on the veggie stock paste next time as the salt level is pretty intense (and the stock concentrate overpowering) with the two teaspoons. The muffins wouldn't be lacking for the omission of the stock paste altogether sub'd for some sea salt in my opinion. The zucchini, corn and ham combo is a winner and love that they are g.f!

    Would like to make the recipe however Im finding it difficult - we dont need the recipe to be gluten free and as such we dont have arrowroot or coconut flour and dont really want to buy them. They also don't seem to be simple/straight swaps for flour/cornflour. Do you happen to have a version of the recipe that just uses normal flour/cornflour???
