Ingredients

  • 125 g Butter
  • 90g g Desiccated Coconut
  • 100 g rolled oats
  • 200 g raw sugar
  • 180 g self-raising flour
  • 20 g golden syrup
  • 1 egg

Optional Extras

  • 100 g Saltanas, or
  • 100 g chocolate chips, or
  • 100 g mixed dried fruit, or
  • 100 g crushed nuts

Recipe's preparation

  1. Preheat oven to 180c

    line a slice tray and set aside.

     

    Place butter in bowl and melt 30sec/60C/speed 3 (or until melted)

    Add in all other ingredients and mix on Counter-clockwise operation"Counter-clockwise operation" /10sec/speed 3. Scrape down sides of bowl and repeat if needed or until mixture is combined.

     

    Press into lined slice tray, using MC to flatten and smooth.

     

    Bake in oven 180c for approx. 30min or until golden on top. Leave to cool in tray before slicing.

     

Tip

These are great as are, or you can add in any of the optional extras for a different take.

 

They freeze great and the kids love them in their lunch boxes.

 

Also works well with half the amount of sugar.

 

Can use a fruit and nut muesli cereal mix (about 200g) instead of the rolled oats

    I made this for Anzac Day as I already had Anzac biscuits in my cupboard. 😄 It was a great hit, very yummy but because of an earlier comment that it was crumbly, I added an extra 10 grams of butter. Will definitely make again. I didn't add any of the extras.

    A very easy to go to recipe. Wanted something super easy to take for op shop morning tea tomorrow. Enthusiasm wasn't at it greatest. Worked a treat. I added choc chips, ran out of rolled oats so,added a mix of bran, cornflakes, weet bix and some just right. Hence very very tasty.

    Delicious! Big Smile I used coconut sugar instead of raw sugar and maple syrup instead of golden syrup. Crispy on the edges and moist and chewy in the centre!  Cooking 7
