Ingredients

Cake

  • 80 g walnuts
  • 50 g brown sugar
  • 2 tsp cinnamon, ground
  • 3 granny smith apples, large
  • 50 g Butter
  • 60 g caster sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 200 g self-raising flour
  • 50 g Milk, or buttermilk
  • 1 pinch salt

Recipe's preparation

    Method
  1. *Pre heat oven to 180 deg.

    1. Add walnuts, brown sugar and cinnamon to TM and chop - 5 sec/speed 5. Set aside. Don't wash bowl.

    2. Add apples (peeled, cored and halved) to TM and chop 5 sec/speed 3. Set aside. Don't wash bowl.

    3. Add butter and caster sugar to TM and cream - 5 sec/speed 5.

    4. Add vanilla, eggs and chopped apples and mix - Counter-clockwise operation"Counter-clockwise operation" 5 sec/speed 4.

    5. Add flour, milk and salt and combine - Counter-clockwise operation"Counter-clockwise operation" 5 sec/speed 4.

    6. Add half of the batter to greased and lined baking dish. Sprinkle almost all of the reserved sugar, walnut and cinnamon mixture evenly on top. Then pour the rest of the batter on top.

    7. Sprinkle remaining sugar mixture on top and bake - 30-35 min or until cooked through. 

Tip

Slice an extra apple and layer in the middle, on top of the sugar mixture for an extra apple(y) bite!

    Made this today for Mothers Day morning tea tomorrow. It looks and smells divine. Can't wait to cut into it. I followed suggestion to put a layer of sliced apples in middle, too. Thanks for recipe.

    Made cake into muffins. Delicious! Not too sweet either which I liked. Will definitely make again. We only had pink lady apples but I'd like to try with Granny Smith too. Thanks for posting recipe.

    Taste was good but I made mistakes. I weighed the flour into the bowl & realised i’d missed step 4, so combined step 4 & 5 together. Found the cake took far longer to cook & was too dense & moist. Could have also been our new gas oven that i’m still getting used to. Well worth another try though.

    This is delicious. I've made it three times now and it's always a crowd pleaser and so easy! I used coconut sugar instead of brown, same quantity, same result (perhaps a little healthier?? tmrc_emoticons.)) I've also used red or green apples, just waterever I have at the time and it's just as nice. Thanks for sharing the recipe.
